The Mediterranean Table
The theme in March was "The Mediterranean Table". Many groups were surprised to discover that a very wide region, spanning many countries, is considered "Mediterranean". So our club members had a lot of options when planning their menus!

This group of friends enjoyed a bountiful Mediterranean dinner, trying a few new recipes that turned out quite well. The evening began with some cheeses, nuts, dried fruit, olives, crackers and baked pita. The star of the appetizer selection was a Maltese Kapunata - a very tasty medley of eggplant, olives and other veggies and spices & herbs. The main course was an impressive dish of Baked Chicken with Chickpeas, Olives, and Greens accompanied by a beautiful salad. Dessert was a Greek Orange Cake which finished the meal on a sweet note.
